Ingredients

  • Broken rice - 150 grams
  • Soy protein (textured vegetable protein) - 50 grams
  • Mushrooms (shiitake or oyster) - 100 grams, finely chopped
  • Carrot - 1 medium, julienned
  • Daikon radish - 100 grams, julienned
  • Cucumber - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 200 ml
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, combine the soaked rice with 200 ml of vegetable broth and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until cooked and fluffy.
  3. While the rice cooks, prepare the 'bì'. In a skillet, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the chopped mushrooms and soy protein to the skillet, stirring well. Cook for about 5 minutes until the mushrooms are soft.
  5. Season the mixture with soy sauce, black pepper, and cook for another 5 minutes, allowing the flavors to meld. Set aside.
  6. In a small bowl, mix rice vinegar and sugar to create a quick pickling solution. Add the julienned carrot and daikon radish, tossing to coat, and let them marinate for about 10 minutes.
  7. Once the rice is cooked, fluff it with a fork and divide it between two plates.
  8. Top the rice with the 'bì' mixture and arrange the pickled vegetables and cucumber slices on the side.
  9. Garnish with fresh cilantro before serving.
