Ingredients

  • Broken rice - 200 grams
  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemongrass - 1 stalk, finely chopped
  • Vegetable oil - 2 tablespoons
  • Cucumber - 1 medium, sliced
  • Pickled carrots - 100 grams
  • Fresh herbs (mint, cilantro) - 1/4 cup each, chopped
  • Chili sauce - to taste
  • Salt - to taste
  • Ground black pepper - to taste

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak it for 30 minutes.
  2. In a bowl, marinate the firm tofu with soy sauce, minced garlic, and chopped lemongrass for at least 15 minutes.
  3. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Once hot, add the marinated tofu and grill until golden brown on both sides, about 5-7 minutes. Remove from heat and set aside.
  4. In a pot, bring 500 ml of water to a boil, add the soaked rice and a pinch of salt. Reduce to a simmer, cover, and cook for 15-20 minutes until the rice is tender and water is absorbed.
  5. While the rice cooks, prepare the pickled carrots if not already done by soaking in vinegar, sugar, and salt for at least 30 minutes.
  6. Once the rice is cooked, fluff it with a fork and let it sit for a couple of minutes.
  7. To serve, place a generous portion of rice on each plate, top with grilled tofu, cucumber slices, pickled carrots, and fresh herbs. Drizzle with chili sauce and additional soy sauce if desired.
