Ingredients
- Broken rice - 200 grams
- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemongrass - 1 stalk, finely chopped
- Vegetable oil - 2 tablespoons
- Cucumber - 1 medium, sliced
- Pickled carrots - 100 grams
- Fresh herbs (mint, cilantro) - 1/4 cup each, chopped
- Chili sauce - to taste
- Salt - to taste
- Ground black pepper - to taste
Steps
- Rinse the broken rice under cold water until the water runs clear, then soak it for 30 minutes.
- In a bowl, marinate the firm tofu with soy sauce, minced garlic, and chopped lemongrass for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Once hot, add the marinated tofu and grill until golden brown on both sides, about 5-7 minutes. Remove from heat and set aside.
- In a pot, bring 500 ml of water to a boil, add the soaked rice and a pinch of salt. Reduce to a simmer, cover, and cook for 15-20 minutes until the rice is tender and water is absorbed.
- While the rice cooks, prepare the pickled carrots if not already done by soaking in vinegar, sugar, and salt for at least 30 minutes.
- Once the rice is cooked, fluff it with a fork and let it sit for a couple of minutes.
- To serve, place a generous portion of rice on each plate, top with grilled tofu, cucumber slices, pickled carrots, and fresh herbs. Drizzle with chili sauce and additional soy sauce if desired.
