Ingredients

  • Broken rice - 150 grams
  • Pork belly - 100 grams
  • Pork skin - 50 grams
  • Garlic - 2 cloves, minced
  • Shallots - 1 small, diced
  • Fish sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cucumber - 1 small, sliced
  • Pickled carrots and daikon - 100 grams
  • Fresh herbs (cilantro, mint) - 10 grams
  • Lime - 1, cut into wedges
  • Chili sauce - for serving (optional)

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, bring 300ml of water to a boil, add the soaked rice, reduce the heat, cover, and simmer for about 20 minutes until cooked. Fluff with a fork and keep warm.
  3. While the rice is cooking, prepare the pork belly and pork skin. In a skillet over medium heat, add a tablespoon of oil and sauté the minced garlic and diced shallots until fragrant.
  4. Add the pork belly to the skillet and cook until browned and cooked through, about 10 minutes. Remove from the skillet and let cool slightly, then shred into bite-sized pieces.
  5. Add the pork skin to the skillet and cook for an additional 5 minutes until crispy. Remove from heat and let cool, then shred the pork skin.
  6. In a bowl, combine the shredded pork belly and pork skin with fish sauce, sugar, and black pepper. Mix well.
  7. To serve, place a portion of broken rice on each plate, top with the pork mixture, and garnish with sliced cucumber, pickled carrots and daikon, and fresh herbs.
  8. Serve with lime wedges and chili sauce on the side for added flavor.
