Ingredients
- Broken rice - 150 grams
- Pork belly - 100 grams
- Pork skin - 50 grams
- Garlic - 2 cloves, minced
- Shallots - 1 small, diced
- Fish sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cucumber - 1 small, sliced
- Pickled carrots and daikon - 100 grams
- Fresh herbs (cilantro, mint) - 10 grams
- Lime - 1, cut into wedges
- Chili sauce - for serving (optional)
Steps
- Rinse the broken rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, bring 300ml of water to a boil, add the soaked rice, reduce the heat, cover, and simmer for about 20 minutes until cooked. Fluff with a fork and keep warm.
- While the rice is cooking, prepare the pork belly and pork skin. In a skillet over medium heat, add a tablespoon of oil and sauté the minced garlic and diced shallots until fragrant.
- Add the pork belly to the skillet and cook until browned and cooked through, about 10 minutes. Remove from the skillet and let cool slightly, then shred into bite-sized pieces.
- Add the pork skin to the skillet and cook for an additional 5 minutes until crispy. Remove from heat and let cool, then shred the pork skin.
- In a bowl, combine the shredded pork belly and pork skin with fish sauce, sugar, and black pepper. Mix well.
- To serve, place a portion of broken rice on each plate, top with the pork mixture, and garnish with sliced cucumber, pickled carrots and daikon, and fresh herbs.
- Serve with lime wedges and chili sauce on the side for added flavor.
