- Broken rice - 150 grams
- Pork loin - 200 grams
- Fish sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Cucumber - 1/2, sliced
- Tomato - 1, sliced
- Spring onion - 2 stalks, chopped
- Fresh cilantro - a handful, chopped
- Lime - 1, cut into wedges
Steps
- Rinse the broken rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Meanwhile, prepare the marinade for the pork by mixing fish sauce, minced garlic, and black pepper in a bowl.
- Slice the pork loin and marinate it in the mixture for at least 15 minutes.
- Heat vegetable oil in a pan over medium heat, then add the marinated pork slices and cook for about 5-7 minutes on each side until golden brown and cooked through.
- While the pork is cooking, drain the soaked rice and add it to a rice cooker with 300 ml of water. Cook according to the rice cooker instructions.
- Once the rice is cooked, fluff it with a fork and let it sit covered for 5 minutes.
- To serve, place a generous scoop of broken rice on each plate, top with the cooked pork, and garnish with cucumber slices, tomato slices, chopped spring onion, and fresh cilantro.
- Serve with lime wedges on the side for a zesty finish.
