Ingredients
- Jasmine rice - 150 grams
- Garlic - 6 cloves, minced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - a handful, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant and golden brown, about 2-3 minutes.
- Add the rinsed rice to the pot, stirring to coat the grains with the garlic oil for an additional minute.
- Pour in the vegetable broth, soy sauce, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a small pan over medium heat. Add the chopped green onions and sauté for 1-2 minutes until they are tender.
- Once the rice is done, fluff it with a fork and mix in the sautéed green onions.
- Serve the Cơm Tỏi hot, garnished with chopped cilantro and lime wedges on the side.
