Ingredients

  • Jasmine rice - 150 grams
  • Garlic - 6 cloves, minced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant and golden brown, about 2-3 minutes.
  3. Add the rinsed rice to the pot, stirring to coat the grains with the garlic oil for an additional minute.
  4. Pour in the vegetable broth, soy sauce, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. While the rice is cooking, heat the remaining tablespoon of olive oil in a small pan over medium heat. Add the chopped green onions and sauté for 1-2 minutes until they are tender.
  6. Once the rice is done, fluff it with a fork and mix in the sautéed green onions.
  7. Serve the Cơm Tỏi hot, garnished with chopped cilantro and lime wedges on the side.
