- Pork ribs - 400 grams
- Jasmine rice - 150 grams
- Garlic - 4 cloves, minced
- Shallots - 2, finely chopped
- Soy sauce - 3 tablespoons
- Fish sauce - 1 tablespoon
- Honey - 1 tablespoon
- Black pepper - 1 teaspoon
- Lime juice - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Cucumber - 1, sliced for garnish
- Fresh cilantro - a handful for garnish
- Water - 300 milliliters
Steps
- In a bowl, mix soy sauce, fish sauce, honey, minced garlic, black pepper, and lime juice. Marinate the pork ribs in this mixture for at least 30 minutes.
- Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes until the rice is tender.
- Heat vegetable oil in a grill pan over medium-high heat. Remove the pork ribs from the marinade and grill for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
- While the ribs are grilling, sauté the chopped shallots in the remaining marinade in a small saucepan over medium heat for about 5 minutes until fragrant.
- Serve the cooked rice on plates, top with grilled pork ribs, and drizzle with the sautéed shallots and sauce. Garnish with cucumber slices and fresh cilantro.
