Ingredients

  • Glutinous rice - 200 grams
  • Water - 300 milliliters
  • Fermented rice (cơm rượu) - 100 grams
  • Coconut milk - 100 milliliters
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Chopped green onions - 2 tablespoons
  • Chopped cilantro - 2 tablespoons
  • Sliced cucumber - 1 small
  • Sliced radish - 1 small

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer or a steamer basket lined with cheesecloth for about 30 minutes until tender.
  3. While the rice is steaming, mix the fermented rice with coconut milk, sugar, and salt in a bowl until well combined.
  4. Once the rice is cooked, let it cool slightly, then combine it with the fermented rice mixture and stir gently to incorporate.
  5. Cover the mixture and let it sit at room temperature for about 30 minutes to allow the flavors to meld.
  6. Serve the cơm rượu warm, garnished with chopped green onions and cilantro, alongside sliced cucumber and radish for a refreshing contrast.
