Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 1 small head (about 400 grams)
  • Coconut oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Red bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Green beans - 100 grams, trimmed
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. In a food processor, pulse the florets until they resemble rice grains. Set aside.
  2. Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the chicken breast to the skillet, seasoning with salt and pepper. Cook for about 5-7 minutes, flipping halfway, until the chicken is browned and cooked through. Remove chicken from the skillet and let it rest.
  4. In the same skillet, add the remaining tablespoon of coconut oil, red bell pepper, carrot, and green beans. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crisp.
  5. Add the cauliflower rice to the skillet, along with fish sauce and lime juice. Stir well to combine and cook for an additional 3-4 minutes until the cauliflower is tender.
  6. Slice the rested chicken and serve it over the cauliflower rice mixture. Garnish with fresh cilantro before serving.
