- Olive oil - 15 ml
- Garlic, minced - 2 cloves
- Shallots, finely chopped - 1 medium
- Carrot, julienned - 1 medium
- Zucchini, thinly sliced - 1 medium
- Bell pepper, thinly sliced - 1 medium
- Mushrooms, sliced - 100 grams
- Green onions, chopped - 2 stalks
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 15 ml
- Black pepper - to taste
- Sesame seeds - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice and 300 ml of water. Bring to a boil, then cover and simmer on low heat for 15 minutes until the rice is cooked and water is absorbed. Fluff with a fork and let it cool slightly.
- Heat the olive oil in a large skillet over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant (about 2 minutes).
- Add the julienned carrot, sliced zucchini, bell pepper, and mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Stir in the cooked rice, soy sauce, black pepper, and lime juice. Mix well to combine all ingredients and heat through for another 3-4 minutes.
- Transfer the rice mixture to a baking dish, spreading it evenly. Preheat the oven to 200°C (390°F) and bake for 10-15 minutes until the top is slightly crispy.
- Remove from the oven and garnish with chopped green onions, fresh cilantro, and sesame seeds before serving.
