- Jasmine rice - 150 grams
- Straw mushrooms (canned or fresh) - 200 grams
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Vegetable broth - 300 ml
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Carrot - 1 medium, julienned
- Peas - 50 grams
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, heat the sesame oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
- Add the drained mushrooms and cook for about 3 minutes, stirring occasionally.
- Add the julienned carrot and peas, cooking for another 2 minutes.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
- Pour in the vegetable broth and soy sauce, then bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped green onions and fresh cilantro, then season with salt and pepper to taste.
