Ingredients

  • Jasmine rice - 150 grams
  • Straw mushrooms (canned or fresh) - 200 grams
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Vegetable broth - 300 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Peas - 50 grams
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, heat the sesame oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
  3. Add the drained mushrooms and cook for about 3 minutes, stirring occasionally.
  4. Add the julienned carrot and peas, cooking for another 2 minutes.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
  6. Pour in the vegetable broth and soy sauce, then bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with chopped green onions and fresh cilantro, then season with salt and pepper to taste.
