Ingredients
- Jasmine rice - 200 grams
- Water - 400 ml
- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Mussels - 100 grams, cleaned
- Garlic - 2 cloves, minced
- Shallots - 1 small, finely chopped
- Green onion - 2 stalks, chopped
- Fish sauce - 2 tablespoons
- Lemon juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
- In a pot, combine the rinsed rice and 400 ml of water. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the rice is cooked. Remove from heat and let it sit covered for 5 minutes.
- While the rice is resting, heat olive oil in a large skillet over medium heat. Add minced garlic and chopped shallots, and sauté until fragrant, about 2 minutes.
- Add the shrimp, squid, and mussels to the skillet. Cook for about 5-7 minutes until the seafood is cooked through and opaque.
- Stir in fish sauce, lemon juice, and black pepper, mixing well. Remove from heat and add the chopped green onions.
- Fluff the cooked rice with a fork and gently mix it with the seafood mixture until evenly combined.
- Wet your hands and form the rice and seafood mixture into compact balls or patties.
- Serve the rice balls garnished with toasted sesame seeds and fresh cilantro.
