Ingredients

  • Jasmine rice - 200 grams
  • Water - 400 ml
  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Mussels - 100 grams, cleaned
  • Garlic - 2 cloves, minced
  • Shallots - 1 small, finely chopped
  • Green onion - 2 stalks, chopped
  • Fish sauce - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a pot, combine the rinsed rice and 400 ml of water. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the rice is cooked. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice is resting, heat olive oil in a large skillet over medium heat. Add minced garlic and chopped shallots, and sauté until fragrant, about 2 minutes.
  4. Add the shrimp, squid, and mussels to the skillet. Cook for about 5-7 minutes until the seafood is cooked through and opaque.
  5. Stir in fish sauce, lemon juice, and black pepper, mixing well. Remove from heat and add the chopped green onions.
  6. Fluff the cooked rice with a fork and gently mix it with the seafood mixture until evenly combined.
  7. Wet your hands and form the rice and seafood mixture into compact balls or patties.
  8. Serve the rice balls garnished with toasted sesame seeds and fresh cilantro.
