Ingredients

  • glutinous rice - 200 grams
  • water - 300 ml
  • shiitake mushrooms - 50 grams
  • carrot - 1 medium, diced
  • green beans - 50 grams, chopped
  • soy sauce - 2 tablespoons
  • sesame oil - 1 tablespoon
  • fresh cilantro - 2 tablespoons, chopped
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • toasted sesame seeds - 1 tablespoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer lined with cheesecloth for about 30 minutes, or until the grains are translucent and sticky.
  3. While the rice is steaming, prepare the filling: heat sesame oil in a pan over medium heat, add diced carrot and chopped green beans, and sauté for 5 minutes until tender.
  4. Add the shiitake mushrooms to the pan and sauté for another 3 minutes. Then, pour in the soy sauce, salt, and black pepper, stirring well to combine. Cook for 2 more minutes and remove from heat.
  5. Once the rice is cooked, transfer it to a large bowl and let it cool slightly until it is manageable to touch.
  6. Wet your hands with water to prevent sticking, then take a handful of rice and flatten it in your palm. Place about a tablespoon of the vegetable filling in the center and mold the rice around it to form a ball. Repeat until all rice and filling are used.
  7. Sprinkle toasted sesame seeds and chopped cilantro on top of the rice balls before serving. Enjoy warm or at room temperature.
