Ingredients

  • Jasmine rice - 150 grams
  • Mixed mushrooms (shiitake, oyster, and button) - 200 grams
  • Carrot - 1 medium (about 100 grams), julienned
  • Bell pepper (red or yellow) - 1 medium (about 120 grams), diced
  • Garlic - 3 cloves, minced
  • Onion - 1 small (about 70 grams), finely chopped
  • Vegetable broth - 300 milliliters
  • Soy sauce - 2 tablespoons (30 ml)
  • Olive oil - 1 tablespoon (15 ml)
  • Fresh cilantro - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the vegetable broth over medium heat until it simmers.
  3. Add the rinsed jasmine rice to the saucepan, cover, and reduce the heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  4. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant and translucent.
  5. Add the mixed mushrooms to the skillet and cook for about 5 minutes until they are tender and have released their moisture.
  6. Stir in the julienned carrots and diced bell pepper, cooking for another 3-4 minutes until the vegetables are just tender.
  7. Pour the soy sauce over the vegetable mixture, adding black pepper and salt to taste. Stir well to combine, cooking for an additional 2 minutes to heat through.
  8. Fluff the cooked jasmine rice with a fork and divide it between two plates. Top with the sautéed mushroom and vegetable mixture.
