- Water - 400 milliliters
- Extra-virgin olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Carrots - 1 medium, diced
- Bell pepper - 1 medium, diced
- Mushrooms - 100 grams, sliced
- Soy sauce (Kosher) - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a clay pot or a heavy-bottomed pot, heat the olive oil over medium heat and sauté the minced garlic and chopped shallots until fragrant.
- Add the diced carrots, bell pepper, and sliced mushrooms to the pot, cooking for about 5 minutes until slightly softened.
- Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
- Pour in the 400 milliliters of water, soy sauce, salt, and black pepper. Stir gently to distribute evenly.
- Cover the pot with a lid and bring to a boil over medium-high heat. Once boiling, reduce the heat to low and cook for 20 minutes without lifting the lid.
- After 20 minutes, turn off the heat and let the pot sit covered for an additional 10 minutes to allow the rice to finish steaming.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
