Ingredients

  • Jasmine rice - 200 grams
  • Water - 400 milliliters
  • Extra-virgin olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Carrots - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Soy sauce (Kosher) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a clay pot or a heavy-bottomed pot, heat the olive oil over medium heat and sauté the minced garlic and chopped shallots until fragrant.
  3. Add the diced carrots, bell pepper, and sliced mushrooms to the pot, cooking for about 5 minutes until slightly softened.
  4. Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
  5. Pour in the 400 milliliters of water, soy sauce, salt, and black pepper. Stir gently to distribute evenly.
  6. Cover the pot with a lid and bring to a boil over medium-high heat. Once boiling, reduce the heat to low and cook for 20 minutes without lifting the lid.
  7. After 20 minutes, turn off the heat and let the pot sit covered for an additional 10 minutes to allow the rice to finish steaming.
  8. Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
