- Jasmine rice - 150 grams
- Coconut water - 400 ml
- Coconut milk - 100 ml
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 inch, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped
- Fresh cilantro - a handful, chopped
- Vegetable oil - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a medium pot, heat the vegetable oil over medium heat and sauté the chopped shallots, minced garlic, and grated ginger until fragrant, about 2-3 minutes.
- Add the rinsed rice to the pot and stir for another 2 minutes, allowing the rice to absorb the flavors.
- Pour in the coconut water and salt, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then stir in the coconut milk, black pepper, and chopped green onions.
- Serve warm, garnished with fresh cilantro.
