Ingredients

  • Jasmine rice - 150 grams
  • Coconut water - 400 ml
  • Coconut milk - 100 ml
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 inch, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped
  • Fresh cilantro - a handful, chopped
  • Vegetable oil - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium pot, heat the vegetable oil over medium heat and sauté the chopped shallots, minced garlic, and grated ginger until fragrant, about 2-3 minutes.
  3. Add the rinsed rice to the pot and stir for another 2 minutes, allowing the rice to absorb the flavors.
  4. Pour in the coconut water and salt, then bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork, then stir in the coconut milk, black pepper, and chopped green onions.
  8. Serve warm, garnished with fresh cilantro.
