- Chicken thighs - 400 g
- Cauliflower - 1 medium head (about 600 g)
- Coconut aminos - 3 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Honey - 1 teaspoon
- Black pepper - 1 teaspoon
- Sesame oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Green onions - 2, sliced for garnish
Steps
- In a bowl, mix coconut aminos, minced garlic, grated ginger, lime juice, fish sauce, honey, black pepper, and sesame oil to create a marinade.
- Add the chicken thighs to the marinade, coating them well. Cover and refrigerate for at least 30 minutes.
- While the chicken is marinating, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower, and cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains.
- Heat a skillet over medium heat, add a splash of water, and then add the riced cauliflower. Cook for about 5-7 minutes, stirring occasionally, until tender. Season with salt to taste.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken thighs for 5-7 minutes on each side or until cooked through and internal temperature reaches 75°C.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the grilled chicken on a bed of cauliflower rice, garnished with chopped cilantro and sliced green onions.
