Ingredients

  • Chicken thighs - 400 g
  • Cauliflower - 1 medium head (about 600 g)
  • Coconut aminos - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Green onions - 2, sliced for garnish

Steps

  1. In a bowl, mix coconut aminos, minced garlic, grated ginger, lime juice, fish sauce, honey, black pepper, and sesame oil to create a marinade.
  2. Add the chicken thighs to the marinade, coating them well. Cover and refrigerate for at least 30 minutes.
  3. While the chicken is marinating, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower, and cut it into florets.
  4. Using a food processor, pulse the cauliflower florets until they resemble rice grains.
  5. Heat a skillet over medium heat, add a splash of water, and then add the riced cauliflower. Cook for about 5-7 minutes, stirring occasionally, until tender. Season with salt to taste.
  6. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken thighs for 5-7 minutes on each side or until cooked through and internal temperature reaches 75°C.
  7. Once the chicken is done, let it rest for a few minutes before slicing.
  8. Serve the grilled chicken on a bed of cauliflower rice, garnished with chopped cilantro and sliced green onions.
