Ingredients
- Chicken thighs - 400 grams
- Cauliflower - 300 grams
- Garlic - 4 cloves, minced
- Shallots - 2, finely chopped
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Olive oil - 2 tablespoons
- Black pepper - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Green onions - 2, sliced
- Lime - 1, cut into wedges
- Salt - to taste
Steps
- Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- Season the chicken thighs with salt, black pepper, and half of the minced garlic.
- Sear the chicken thighs in the skillet for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil, then add the chopped shallots and remaining garlic. Sauté until fragrant and translucent.
- While the shallots are cooking, chop the cauliflower into florets and pulse in a food processor until it resembles rice grains.
- Add the cauliflower rice to the skillet with the shallots and garlic, stirring to combine. Cook for about 5-7 minutes, allowing it to soften and absorb flavors.
- Stir in the soy sauce and fish sauce into the cauliflower rice, mixing well. Cook for another 2-3 minutes.
- Serve the cauliflower rice on plates, topped with the seared chicken thighs. Garnish with chopped cilantro and sliced green onions.
- Serve with lime wedges on the side for squeezing over the dish.
