Ingredients

  • Chicken thighs - 400 grams
  • Cauliflower - 300 grams
  • Garlic - 4 cloves, minced
  • Shallots - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Green onions - 2, sliced
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Season the chicken thighs with salt, black pepper, and half of the minced garlic.
  3. Sear the chicken thighs in the skillet for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil, then add the chopped shallots and remaining garlic. Sauté until fragrant and translucent.
  5. While the shallots are cooking, chop the cauliflower into florets and pulse in a food processor until it resembles rice grains.
  6. Add the cauliflower rice to the skillet with the shallots and garlic, stirring to combine. Cook for about 5-7 minutes, allowing it to soften and absorb flavors.
  7. Stir in the soy sauce and fish sauce into the cauliflower rice, mixing well. Cook for another 2-3 minutes.
  8. Serve the cauliflower rice on plates, topped with the seared chicken thighs. Garnish with chopped cilantro and sliced green onions.
  9. Serve with lime wedges on the side for squeezing over the dish.
