Ingredients

  • Grouper fillets - 300 grams
  • Lemongrass stalks - 2, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Fish sauce - 2 tablespoons
  • Lime - 1, juiced
  • Red chili - 1, sliced (optional for heat)
  • Fresh cilantro - 20 grams, for garnish
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1 cup

Steps

  1. Prepare the grouper fillets by rinsing them under cold water and patting them dry with paper towels.
  2. In a bowl, mix the chopped lemongrass, grated ginger, minced garlic, sliced shallots, fish sauce, lime juice, black pepper, and salt to create a marinade.
  3. Coat the grouper fillets with the marinade, ensuring they are well covered, and let them marinate for 10 minutes.
  4. While the fish is marinating, prepare a steaming setup by bringing 1 cup of water to a boil in a pot.
  5. Place a steaming rack or a heatproof plate in the pot above the boiling water, and arrange the marinated grouper fillets on the rack.
  6. Cover the pot with a lid and steam the fish for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Once cooked, carefully remove the steaming rack and transfer the grouper to a serving plate.
  8. Garnish the dish with sliced red chili (if using) and fresh cilantro before serving.
