- Jasmine rice - 150 grams
- Fresh clams (hến) - 200 grams
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Green onion - 2 stalks, chopped
- Cilantro - 1/4 cup, chopped
- Lemon grass - 1 stalk, minced
- Vegetable oil - 2 tablespoons
- Fish sauce - 1 tablespoon
- Soy sauce - 1 teaspoon
- Red chili - 1, sliced (optional)
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
- In a pot, cook the soaked rice with 300ml of water over medium heat until it becomes fluffy, about 15-20 minutes.
- While the rice is cooking, rinse the fresh clams thoroughly under cold water to remove any sand and grit.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and shallots, sautéing until fragrant and golden brown.
- Add the clams to the skillet and stir-fry for about 3-5 minutes until they open up. Discard any clams that do not open.
- Stir in minced lemongrass, chopped green onions, and cilantro, cooking for another 2 minutes.
- Add the cooked rice to the skillet, stirring well to combine all ingredients.
- Season the mixture with fish sauce, soy sauce, salt, and pepper, then stir-fry for another 2-3 minutes, ensuring everything is well mixed.
- If desired, add sliced red chili for heat and serve hot.
