Ingredients

  • Jasmine rice - 150 grams
  • Fresh clams (hến) - 200 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Green onion - 2 stalks, chopped
  • Cilantro - 1/4 cup, chopped
  • Lemon grass - 1 stalk, minced
  • Vegetable oil - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
  2. In a pot, cook the soaked rice with 300ml of water over medium heat until it becomes fluffy, about 15-20 minutes.
  3. While the rice is cooking, rinse the fresh clams thoroughly under cold water to remove any sand and grit.
  4. In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and shallots, sautéing until fragrant and golden brown.
  5. Add the clams to the skillet and stir-fry for about 3-5 minutes until they open up. Discard any clams that do not open.
  6. Stir in minced lemongrass, chopped green onions, and cilantro, cooking for another 2 minutes.
  7. Add the cooked rice to the skillet, stirring well to combine all ingredients.
  8. Season the mixture with fish sauce, soy sauce, salt, and pepper, then stir-fry for another 2-3 minutes, ensuring everything is well mixed.
  9. If desired, add sliced red chili for heat and serve hot.
