Ingredients

  • jasmine rice - 150 grams
  • shiitake mushrooms - 100 grams, sliced
  • oyster mushrooms - 100 grams, sliced
  • garlic - 3 cloves, minced
  • onion - 1 small, thinly sliced
  • vegetable broth - 500 ml
  • soy sauce - 2 tablespoons
  • lime juice - 1 tablespoon
  • fresh cilantro - 30 grams, chopped
  • fresh mint - 30 grams, chopped
  • fried shallots - 30 grams
  • bean sprouts - 50 grams
  • salt - to taste
  • black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a saucepan, combine the soaked rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the broth is absorbed.
  3. While the rice is cooking, heat a large skillet over medium heat. Add a splash of water or a little oil and sauté the onions and garlic until fragrant, about 2-3 minutes.
  4. Add the sliced shiitake and oyster mushrooms to the skillet. Cook for 5-7 minutes until they are tender and slightly browned.
  5. Stir in the soy sauce, lime juice, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld.
  6. Once the rice is cooked, fluff it with a fork and divide it between two bowls.
  7. Top each bowl of rice with the sautéed mushroom mixture, followed by fresh cilantro, mint, fried shallots, and bean sprouts.
  8. Serve immediately, garnished with additional herbs and lime wedges if desired.
