- jasmine rice - 150 grams
- shiitake mushrooms - 100 grams, sliced
- oyster mushrooms - 100 grams, sliced
- garlic - 3 cloves, minced
- onion - 1 small, thinly sliced
- vegetable broth - 500 ml
- soy sauce - 2 tablespoons
- lime juice - 1 tablespoon
- fresh cilantro - 30 grams, chopped
- fresh mint - 30 grams, chopped
- fried shallots - 30 grams
- bean sprouts - 50 grams
- salt - to taste
- black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a saucepan, combine the soaked rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the broth is absorbed.
- While the rice is cooking, heat a large skillet over medium heat. Add a splash of water or a little oil and sauté the onions and garlic until fragrant, about 2-3 minutes.
- Add the sliced shiitake and oyster mushrooms to the skillet. Cook for 5-7 minutes until they are tender and slightly browned.
- Stir in the soy sauce, lime juice, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld.
- Once the rice is cooked, fluff it with a fork and divide it between two bowls.
- Top each bowl of rice with the sautéed mushroom mixture, followed by fresh cilantro, mint, fried shallots, and bean sprouts.
- Serve immediately, garnished with additional herbs and lime wedges if desired.
