Ingredients

  • Jasmine rice - 150 grams
  • Shrimp, peeled and deveined - 100 grams
  • Squid, cleaned and sliced - 100 grams
  • Bell pepper, diced - 1/2 cup
  • Carrot, julienned - 1/2 cup
  • Green onion, chopped - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions. Set aside.
  2. In a large skillet or wok, heat the olive oil over medium heat. Add garlic and ginger, sautéing until fragrant, about 1 minute.
  3. Add the shrimp and squid to the skillet, cooking until the shrimp turn pink and the squid is opaque, about 3-4 minutes.
  4. Stir in the bell pepper and carrot, cooking for an additional 2-3 minutes until the vegetables are slightly softened.
  5. Add the cooked jasmine rice to the skillet, mixing well with the seafood and vegetables.
  6. Pour the coconut aminos and lime juice over the mixture, stirring to combine. Season with salt and black pepper to taste.
  7. Remove from heat and stir in chopped green onion and cilantro just before serving. Enjoy hot!
