Ingredients
- Jasmine rice - 150 grams
- Young green jackfruit in brine - 400 grams
- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Fresh cilantro - 30 grams
- Fresh mint - 30 grams
- Cucumber - 1 medium, sliced
- Carrot - 1 medium, julienned
- Red onion - 1 small, thinly sliced
- Chili pepper - 1 small, sliced (optional)
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Peanut butter - 1 tablespoon
- Agave syrup - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 300 ml of vegetable broth and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, drain and rinse the young green jackfruit. In a pan, heat sesame oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the drained jackfruit to the pan, followed by soy sauce, lime juice, and black pepper. Cook for about 10 minutes, stirring occasionally, until the jackfruit is heated through and begins to soften. Use two forks to shred the jackfruit into smaller pieces.
- In a small bowl, mix peanut butter, agave syrup, and a splash of lime juice to create a dipping sauce. Adjust seasoning with salt if needed.
- Prepare the fresh herbs, cucumber, carrot, and red onion for garnish.
- Once the rice is cooked, fluff it with a fork and serve it on plates. Top with the shredded jackfruit mixture and arrange sliced vegetables and herbs on the side. Drizzle with the peanut dipping sauce and add sliced chili pepper if desired.
