Ingredients

  • Cooked jasmine rice - 300 grams
  • Chicken breast - 200 grams, thinly sliced
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and chopped lemongrass, and sauté for 1-2 minutes until fragrant.
  3. Add the sliced chicken breast to the skillet and cook for about 5-7 minutes, or until the chicken is fully cooked and no longer pink.
  4. Stir in the red bell pepper and carrot, cooking for an additional 3-4 minutes until the vegetables are slightly tender.
  5. Add the cooked jasmine rice to the skillet, breaking up any clumps, and mix well with the chicken and vegetables.
  6. Pour the soy sauce over the rice mixture, and stir to combine evenly. Cook for another 2-3 minutes until the rice is heated through.
  7. Season with salt and pepper to taste, and fold in the chopped green onions just before serving.
  8. Serve hot, garnished with additional green onions if desired.
