- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and chopped lemongrass, and sauté for 1-2 minutes until fragrant.
- Add the sliced chicken breast to the skillet and cook for about 5-7 minutes, or until the chicken is fully cooked and no longer pink.
- Stir in the red bell pepper and carrot, cooking for an additional 3-4 minutes until the vegetables are slightly tender.
- Add the cooked jasmine rice to the skillet, breaking up any clumps, and mix well with the chicken and vegetables.
- Pour the soy sauce over the rice mixture, and stir to combine evenly. Cook for another 2-3 minutes until the rice is heated through.
- Season with salt and pepper to taste, and fold in the chopped green onions just before serving.
- Serve hot, garnished with additional green onions if desired.
