Ingredients
- Jasmine rice - 200 grams
- Firm tofu - 200 grams
- Cornstarch - 50 grams
- Vegetable oil - 100 ml
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Cucumbers - 1, sliced
- Carrot - 1, julienned
- Fresh cilantro - 10 grams, chopped
- Fresh mint - 10 grams, chopped
- Soy sauce - 30 ml
- Lime juice - 15 ml
- Chili sauce - 10 ml (optional)
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, bring 400 ml of water to a boil, add the soaked rice, and a pinch of salt. Cover and simmer on low heat for about 15-20 minutes or until the rice is cooked and fluffy.
- While the rice is cooking, drain the tofu and press it to remove excess moisture. Cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
- Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully add the tofu and fry until golden and crispy on all sides, about 5-7 minutes. Remove and drain on paper towels.
- In the same pan, add a little more oil if necessary, and sauté the minced garlic and sliced shallots until fragrant and golden brown.
- In a small bowl, mix soy sauce, lime juice, and chili sauce (if using) to create a dipping sauce.
- To serve, place a portion of rice on each plate, top with crispy tofu, and garnish with sliced cucumbers, julienned carrots, and fresh herbs (cilantro and mint).
