Ingredients

  • Chicken thighs - 400 grams
  • Jasmine rice - 200 grams
  • Garlic - 4 cloves, minced
  • Shallots - 2, thinly sliced
  • Chicken broth - 500 ml
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Vegetable oil - for frying
  • Salt - to taste
  • Pepper - to taste
  • Cucumber - 1, sliced for garnish
  • Cilantro - a handful for garnish
  • Lime - 1, cut into wedges

Steps

  1. Start by marinating the chicken thighs with minced garlic, fish sauce, soy sauce, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  3. In a pot, bring the chicken broth to a boil. Add the soaked rice, cover, and reduce to low heat. Cook for 15-20 minutes until the rice is fluffy and cooked through.
  4. While the rice is cooking, heat vegetable oil in a frying pan over medium-high heat. Fry the marinated chicken thighs for about 6-7 minutes on each side or until golden brown and cooked through.
  5. Remove the chicken from the pan and let it rest for a few minutes before slicing.
  6. In the same pan, add sliced shallots and fry until golden and crispy. Remove and drain on paper towels.
  7. To serve, place a generous portion of rice on each plate, top with sliced chicken, crispy shallots, and garnish with cucumber slices and cilantro. Serve with lime wedges on the side.
