Ingredients

  • Chicken breast - 300 grams
  • Water - 1 liter
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cucumber - 1 medium, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, combine the chicken breast, water, minced garlic, ginger, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is cooked through.
  2. Remove the chicken from the pot and let it cool slightly. Reserve the broth for later use.
  3. Once cooled, shred the chicken into bite-sized pieces using two forks.
  4. In a bowl, mix the shredded chicken with fish sauce, lime juice, black pepper, and adjust the seasoning to taste.
  5. Prepare the salad by combining cucumber slices, chopped cilantro, and mint in a bowl. Add the sliced chili if using.
  6. Serve the shredded chicken on a plate with the herb salad on the side. Drizzle some of the reserved broth over the chicken if desired.
