- Chicken breast - 300 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cucumber - 1 medium, sliced
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Red chili - 1, sliced (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, combine the chicken breast, water, minced garlic, ginger, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and let it cool slightly. Reserve the broth for later use.
- Once cooled, shred the chicken into bite-sized pieces using two forks.
- In a bowl, mix the shredded chicken with fish sauce, lime juice, black pepper, and adjust the seasoning to taste.
- Prepare the salad by combining cucumber slices, chopped cilantro, and mint in a bowl. Add the sliced chili if using.
- Serve the shredded chicken on a plate with the herb salad on the side. Drizzle some of the reserved broth over the chicken if desired.
