  • Chicken thighs - 300 grams
  • Jasmine rice - 150 grams
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Lemongrass - 1 stalk, minced
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Honey - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Chicken broth - 400 ml
  • Cucumber - 1, sliced
  • Fresh cilantro - 10 grams, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine minced garlic, shallots, lemongrass, fish sauce, soy sauce, honey, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Let marinate for at least 20 minutes.
  3. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  4. In a pot, heat 1 tablespoon of vegetable oil over medium heat. Add the rinsed rice and toast for 2 minutes, stirring frequently.
  5. Add chicken broth to the pot with the rice, bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until rice is tender and liquid is absorbed.
  6. While the rice is cooking, heat the remaining 1 tablespoon of vegetable oil in a pan over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through.
  7. Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing.
  8. Fluff the cooked rice with a fork and serve it on plates, topped with sliced chicken, cucumber, and chopped cilantro. Serve with lime wedges on the side.
