Ingredients
- Jasmine rice - 150g
- King oyster mushrooms - 200g, sliced
- Shiitake mushrooms - 100g, sliced
- Vegetable broth - 500ml
- Shallots - 2, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Lime - 1, juiced
- Cucumber - 1, sliced
- Carrot - 1, julienned
- Fresh cilantro - 10g, chopped
- Fresh mint - 10g, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a pot, heat sesame oil over medium heat. Add chopped shallots and sauté until translucent.
- Add minced garlic and grated ginger to the pot and sauté for another minute until fragrant.
- Stir in sliced king oyster and shiitake mushrooms, cooking until they soften, about 5-7 minutes.
- Add the soaked rice to the pot, stirring well to combine with the mushrooms and aromatics.
- Pour in the vegetable broth and soy sauce, then bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and liquid absorbed.
- While the rice is cooking, prepare the dipping sauce by mixing lime juice, a pinch of salt, and black pepper in a small bowl.
- Once the rice is done, fluff it with a fork and serve it on plates topped with fresh cucumber, carrot, cilantro, and mint. Drizzle with the lime dipping sauce before serving.
