Ingredients

  • Jasmine rice - 150g
  • King oyster mushrooms - 200g, sliced
  • Shiitake mushrooms - 100g, sliced
  • Vegetable broth - 500ml
  • Shallots - 2, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Lime - 1, juiced
  • Cucumber - 1, sliced
  • Carrot - 1, julienned
  • Fresh cilantro - 10g, chopped
  • Fresh mint - 10g, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a pot, heat sesame oil over medium heat. Add chopped shallots and sauté until translucent.
  3. Add minced garlic and grated ginger to the pot and sauté for another minute until fragrant.
  4. Stir in sliced king oyster and shiitake mushrooms, cooking until they soften, about 5-7 minutes.
  5. Add the soaked rice to the pot, stirring well to combine with the mushrooms and aromatics.
  6. Pour in the vegetable broth and soy sauce, then bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and liquid absorbed.
  7. While the rice is cooking, prepare the dipping sauce by mixing lime juice, a pinch of salt, and black pepper in a small bowl.
  8. Once the rice is done, fluff it with a fork and serve it on plates topped with fresh cucumber, carrot, cilantro, and mint. Drizzle with the lime dipping sauce before serving.
