- Water - 300 milliliters
- Cucumber - 1 small, sliced
- Fresh cilantro - a handful, for garnish
- Sesame oil - 1 teaspoon
Steps
- In a bowl, mix honey, soy sauce, minced garlic, grated ginger, lime juice, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and water, and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side until fully cooked and slightly charred.
- Once the chicken is done, let it rest for 5 minutes before slicing.
- Serve the sliced chicken over the cooked rice, garnished with cucumber slices, fresh cilantro, and a drizzle of sesame oil.
