- Cucumber - 1, sliced
- Tomato - 1, sliced
- Fresh cilantro - 10 grams, chopped
- Lime - 1, cut into wedges
Steps
- In a bowl, combine minced garlic, chopped shallots, lemon grass, soy sauce, fish sauce, honey, and black pepper to create a marinade for the chicken.
- Add the chicken breast to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- While the chicken is marinating, rinse jasmine rice under cold water until the water runs clear, then cook it according to package instructions (usually 1:1.5 rice-to-water ratio).
- Preheat a grill or grill pan over medium-high heat. Brush the grill with vegetable oil to prevent sticking.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 75°C (165°F).
- Once cooked, let the chicken rest for 5 minutes before slicing it into strips.
- Serve the grilled chicken over a bed of jasmine rice, garnished with sliced cucumber, tomato, and fresh cilantro. Add lime wedges on the side for extra zest.
