Ingredients

  • Chicken breast - 300 grams
  • Jasmine rice - 150 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Lemon grass - 1 stalk, finely chopped
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Honey - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cucumber - 1, sliced
  • Tomato - 1, sliced
  • Fresh cilantro - 10 grams, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a bowl, combine minced garlic, chopped shallots, lemon grass, soy sauce, fish sauce, honey, and black pepper to create a marinade for the chicken.
  2. Add the chicken breast to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. While the chicken is marinating, rinse jasmine rice under cold water until the water runs clear, then cook it according to package instructions (usually 1:1.5 rice-to-water ratio).
  4. Preheat a grill or grill pan over medium-high heat. Brush the grill with vegetable oil to prevent sticking.
  5. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 75°C (165°F).
  6. Once cooked, let the chicken rest for 5 minutes before slicing it into strips.
  7. Serve the grilled chicken over a bed of jasmine rice, garnished with sliced cucumber, tomato, and fresh cilantro. Add lime wedges on the side for extra zest.
