- Chicken breast - 250 grams
- Jasmine rice - 150 grams
- Shiitake mushrooms - 100 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Chicken broth - 500 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a pot, heat 1 teaspoon of sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add the chicken breast to the pot and cook for about 5 minutes on each side until golden brown.
- Pour in the chicken broth, soy sauce, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until the chicken is cooked through.
- Remove the chicken and let it rest for a few minutes before slicing it thinly.
- In the same pot, add the soaked jasmine rice and sliced shiitake mushrooms to the broth. Stir well and bring to a simmer. Cover and cook for 15 minutes or until the rice is tender and has absorbed the liquid.
- Fluff the rice with a fork, add salt and black pepper to taste.
- Serve the rice in bowls topped with sliced chicken, chopped green onions, and garnish with fresh cilantro.
