Ingredients

  • Chicken breast - 250 grams
  • Jasmine rice - 150 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chicken broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
  2. In a pot, heat 1 teaspoon of sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
  3. Add the chicken breast to the pot and cook for about 5 minutes on each side until golden brown.
  4. Pour in the chicken broth, soy sauce, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until the chicken is cooked through.
  5. Remove the chicken and let it rest for a few minutes before slicing it thinly.
  6. In the same pot, add the soaked jasmine rice and sliced shiitake mushrooms to the broth. Stir well and bring to a simmer. Cover and cook for 15 minutes or until the rice is tender and has absorbed the liquid.
  7. Fluff the rice with a fork, add salt and black pepper to taste.
  8. Serve the rice in bowls topped with sliced chicken, chopped green onions, and garnish with fresh cilantro.
