- Cucumber - 100 grams, sliced
- Carrot - 50 grams, julienned
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Sesame oil - 1 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, add the soaked rice and 400 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the water is absorbed and rice is tender.
- While the rice is cooking, poach the chicken breast in a pot of simmering water for about 15-20 minutes until fully cooked. Remove from water and let cool, then shred into bite-sized pieces.
- In a small bowl, mix together the fish sauce, lime juice, minced garlic, salt, and pepper to create the dressing.
- Once the rice is done, fluff it with a fork and drizzle with sesame oil, mixing gently.
- To serve, place a portion of rice on each plate, top with shredded chicken, and drizzle generously with the fish sauce mixture. Garnish with chopped cilantro, cucumber slices, and julienned carrot.
