Ingredients

  • Chicken breast - 300 grams
  • Jasmine rice - 150 grams
  • Water - 400 ml (for cooking rice)
  • Fish sauce - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Cucumber - 100 grams, sliced
  • Carrot - 50 grams, julienned
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, add the soaked rice and 400 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the water is absorbed and rice is tender.
  3. While the rice is cooking, poach the chicken breast in a pot of simmering water for about 15-20 minutes until fully cooked. Remove from water and let cool, then shred into bite-sized pieces.
  4. In a small bowl, mix together the fish sauce, lime juice, minced garlic, salt, and pepper to create the dressing.
  5. Once the rice is done, fluff it with a fork and drizzle with sesame oil, mixing gently.
  6. To serve, place a portion of rice on each plate, top with shredded chicken, and drizzle generously with the fish sauce mixture. Garnish with chopped cilantro, cucumber slices, and julienned carrot.
