Ingredients

  • Jasmine rice - 150 grams
  • Chicken breast - 250 grams
  • Fresh lime leaves - 5 leaves
  • Garlic - 3 cloves
  • Shallots - 2, medium-sized
  • Chicken broth - 400 ml
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cucumber - 1/2, sliced for garnish
  • Fresh coriander - a handful, for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat the vegetable oil over medium heat and sauté the minced garlic and shallots until fragrant.
  3. Add the chicken breast to the pot and sear on both sides until lightly browned.
  4. Pour in the chicken broth, add fish sauce, lime juice, and season with salt and black pepper. Add the lime leaves, cover, and simmer for 20 minutes.
  5. Remove the chicken from the pot and let it rest for a few minutes before slicing it thinly.
  6. In the same pot with the remaining broth, add the soaked rice and bring to a boil. Reduce heat, cover, and cook for about 15-20 minutes until the rice is tender and has absorbed the liquid.
  7. Once cooked, fluff the rice with a fork and serve it on plates topped with the sliced chicken. Garnish with cucumber slices and fresh coriander.
