- Jasmine rice - 150 grams
- Chicken breast - 250 grams
- Fresh lime leaves - 5 leaves
- Garlic - 3 cloves
- Shallots - 2, medium-sized
- Chicken broth - 400 ml
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cucumber - 1/2, sliced for garnish
- Fresh coriander - a handful, for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat the vegetable oil over medium heat and sauté the minced garlic and shallots until fragrant.
- Add the chicken breast to the pot and sear on both sides until lightly browned.
- Pour in the chicken broth, add fish sauce, lime juice, and season with salt and black pepper. Add the lime leaves, cover, and simmer for 20 minutes.
- Remove the chicken from the pot and let it rest for a few minutes before slicing it thinly.
- In the same pot with the remaining broth, add the soaked rice and bring to a boil. Reduce heat, cover, and cook for about 15-20 minutes until the rice is tender and has absorbed the liquid.
- Once cooked, fluff the rice with a fork and serve it on plates topped with the sliced chicken. Garnish with cucumber slices and fresh coriander.
