Ingredients

  • Jasmine rice - 200 grams
  • Chicken breast (Halal) - 300 grams
  • Chicken broth - 500 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, sliced
  • Onion - 1 small, sliced
  • Cilantro - 20 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Lime - 1, cut into wedges
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, bring chicken broth to a simmer. Add the sliced onion, ginger, and minced garlic.
  3. Add the chicken breast to the simmering broth and poach for about 20-25 minutes until fully cooked. Remove the chicken and let it rest.
  4. In a separate pot, heat the vegetable oil over medium heat. Drain the rice and add it to the pot, toasting it lightly for 2-3 minutes.
  5. Add 400 ml of the chicken broth (reserve the rest) to the rice pot, season with salt, and bring to a boil. Reduce heat to low, cover, and cook for 15-18 minutes until the rice is fluffy and liquid is absorbed.
  6. Meanwhile, shred the poached chicken into bite-sized pieces.
  7. Once the rice is done, fluff it with a fork and serve it on plates topped with shredded chicken.
  8. Garnish with chopped cilantro and mint leaves. Serve with lime wedges and a small bowl of soy sauce mixed with fish sauce for dipping.
