Ingredients
- Jasmine rice - 150 grams
- Soy protein chunks - 100 grams
- Vegetable broth - 300 ml
- Soy sauce - 2 tablespoons
- Mushroom soy sauce - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Lemongrass - 1 stalk, finely chopped
- Green onions - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped
- Carrot - 1 medium, julienned
- Cucumber - 1/2, sliced
- Lime - 1, cut into wedges
- Black pepper - to taste
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 20 minutes.
- In a bowl, combine the soy protein chunks with soy sauce, mushroom soy sauce, minced garlic, grated ginger, and chopped lemongrass. Let it marinate for 10 minutes.
- In a pot, bring 300 ml of vegetable broth to a boil. Add the soaked rice and a pinch of salt, then reduce heat to low, cover, and cook for about 15 minutes or until the rice is tender and all the liquid is absorbed.
- While the rice is cooking, heat vegetable oil in a pan over medium heat. Add the marinated soy protein and sauté for about 5-7 minutes until golden brown.
- Once the rice is cooked, fluff it with a fork and drizzle with sesame oil for added flavor.
- To serve, place a portion of jasmine rice on each plate, top with the sautéed soy protein, and garnish with chopped green onions, cilantro, julienned carrots, and cucumber slices.
- Serve with lime wedges on the side for squeezing over the dish, and enjoy your Cơm Gà Chay!
