Ingredients

  • Jasmine rice - 150 grams
  • Soy protein chunks - 100 grams
  • Vegetable broth - 300 ml
  • Soy sauce - 2 tablespoons
  • Mushroom soy sauce - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lemongrass - 1 stalk, finely chopped
  • Green onions - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped
  • Carrot - 1 medium, julienned
  • Cucumber - 1/2, sliced
  • Lime - 1, cut into wedges
  • Black pepper - to taste
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 20 minutes.
  2. In a bowl, combine the soy protein chunks with soy sauce, mushroom soy sauce, minced garlic, grated ginger, and chopped lemongrass. Let it marinate for 10 minutes.
  3. In a pot, bring 300 ml of vegetable broth to a boil. Add the soaked rice and a pinch of salt, then reduce heat to low, cover, and cook for about 15 minutes or until the rice is tender and all the liquid is absorbed.
  4. While the rice is cooking, heat vegetable oil in a pan over medium heat. Add the marinated soy protein and sauté for about 5-7 minutes until golden brown.
  5. Once the rice is cooked, fluff it with a fork and drizzle with sesame oil for added flavor.
  6. To serve, place a portion of jasmine rice on each plate, top with the sautéed soy protein, and garnish with chopped green onions, cilantro, julienned carrots, and cucumber slices.
  7. Serve with lime wedges on the side for squeezing over the dish, and enjoy your Cơm Gà Chay!
