Ingredients

  • Chicken thighs - 400 grams, skinless and boneless
  • Jasmine rice - 150 grams
  • Chicken broth - 500 milliliters
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Shallots - 2, thinly sliced
  • Soy sauce (kosher) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Lime - 1, juiced
  • Fresh cilantro - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cucumber - 1, sliced (for garnish)
  • Cherry tomatoes - 100 grams, halved (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, marinate the chicken thighs with soy sauce, sesame oil, lime juice, garlic, ginger, salt, and black pepper. Let it sit for at least 20 minutes.
  3. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear, then drain.
  4. In a baking dish, spread the rinsed rice evenly. Pour the chicken broth over the rice.
  5. Place the marinated chicken thighs on top of the rice in the baking dish. Scatter the sliced shallots over the chicken.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
  7. After 40 minutes, remove the foil and bake for an additional 10 minutes to allow the chicken to brown.
  8. Once done, remove the dish from the oven and let it rest for 5 minutes before serving.
  9. Garnish with fresh cilantro, cucumber slices, and cherry tomatoes before serving.
