  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Spring onions - 2 stalks, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and chopped onion, sautéing until fragrant and translucent.
  3. Stir in the diced carrots and bell pepper, cooking for 3-4 minutes until tender.
  4. Add the green peas and cooked rice, breaking up any clumps, and stir-fry for about 3-5 minutes.
  5. Push the rice mixture to one side of the pan and crack the eggs into the empty space, scrambling them until fully cooked.
