Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Tofu - 100 grams, cubed
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Mushrooms (shiitake or oyster) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 15 minutes.
- In a pot, bring 300 ml of water to a boil, add the soaked rice, and a pinch of salt. Reduce heat to low, cover, and cook for 15 minutes until rice is tender and water is absorbed.
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large pan over medium heat.
- Add chopped onion and minced garlic to the pan, sautéing until fragrant and the onion is translucent.
- Add the cubed tofu to the pan and cook until golden brown on all sides, about 5-7 minutes.
- Stir in the julienned carrot, sliced bell pepper, green beans, and mushrooms. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
- Add 2 tablespoons of soy sauce, and season with salt and black pepper to taste. Stir well to combine.
- Once the rice is done, fluff it with a fork and serve it on plates topped with the vegetable and tofu mixture.
- Garnish with fresh cilantro and serve with lime wedges on the side for an added burst of flavor.
