Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Tofu - 100 grams, cubed
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Mushrooms (shiitake or oyster) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 15 minutes.
  2. In a pot, bring 300 ml of water to a boil, add the soaked rice, and a pinch of salt. Reduce heat to low, cover, and cook for 15 minutes until rice is tender and water is absorbed.
  3. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large pan over medium heat.
  4. Add chopped onion and minced garlic to the pan, sautéing until fragrant and the onion is translucent.
  5. Add the cubed tofu to the pan and cook until golden brown on all sides, about 5-7 minutes.
  6. Stir in the julienned carrot, sliced bell pepper, green beans, and mushrooms. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
  7. Add 2 tablespoons of soy sauce, and season with salt and black pepper to taste. Stir well to combine.
  8. Once the rice is done, fluff it with a fork and serve it on plates topped with the vegetable and tofu mixture.
  9. Garnish with fresh cilantro and serve with lime wedges on the side for an added burst of flavor.
