Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Shiitake mushrooms - 100 grams, sliced
  • Oyster mushrooms - 100 grams, sliced
  • Carrot - 50 grams, julienned
  • Bell pepper - 50 grams, julienned
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks, chopped for garnish
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
  2. In a medium pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
  3. While the rice is cooking, heat vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3 minutes.
  4. Add the sliced shiitake and oyster mushrooms to the skillet, cooking for about 5 minutes until they are softened.
  5. Stir in the julienned carrot and bell pepper, and cook for another 3-4 minutes until the vegetables are tender-crisp.
  6. Pour in the soy sauce and sesame oil, stirring to combine. Season with salt and black pepper to taste, and cook for an additional 2 minutes.
  7. Once the rice is done, fluff it with a fork and divide between two plates. Top each serving with the sautéed mushroom and vegetable mixture.
  8. Garnish with chopped green onions and fresh cilantro before serving.
