Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Shiitake mushrooms - 100 grams, sliced
- Oyster mushrooms - 100 grams, sliced
- Carrot - 50 grams, julienned
- Bell pepper - 50 grams, julienned
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks, chopped for garnish
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a medium pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, heat vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3 minutes.
- Add the sliced shiitake and oyster mushrooms to the skillet, cooking for about 5 minutes until they are softened.
- Stir in the julienned carrot and bell pepper, and cook for another 3-4 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce and sesame oil, stirring to combine. Season with salt and black pepper to taste, and cook for an additional 2 minutes.
- Once the rice is done, fluff it with a fork and divide between two plates. Top each serving with the sautéed mushroom and vegetable mixture.
- Garnish with chopped green onions and fresh cilantro before serving.
