Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Shiitake mushrooms - 100 grams, sliced
- Tofu - 100 grams, cubed
- Green beans - 100 grams, trimmed and halved
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Lemongrass - 1 stalk, minced
- Chili pepper - 1, sliced (optional)
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat the sesame oil in a large skillet over medium heat. Add minced garlic, grated ginger, and minced lemongrass, and sauté for 1-2 minutes until fragrant.
- Add the cubed tofu to the skillet and cook until golden brown, about 5 minutes, stirring occasionally.
- Stir in the julienned carrot, daikon radish, shiitake mushrooms, and green beans. Add soy sauce, salt, and pepper, and cook for an additional 5-7 minutes until the vegetables are tender-crisp.
- If using, add the sliced chili pepper for a touch of heat and stir well.
- Once the rice is cooked, fluff it with a fork and serve it topped with the vegetable and tofu mixture.
- Garnish with fresh cilantro before serving.
