- Jasmine rice - 150 grams
- Water - 300 ml
- Tofu - 100 grams
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Broccoli florets - 100 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and 300 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
- In a large non-stick skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the tofu cubes to the skillet and cook for about 5 minutes, turning occasionally until golden brown.
- Stir in the diced carrot, bell pepper, and sliced mushrooms. Cook for an additional 5 minutes until the vegetables are slightly tender.
- Add the broccoli florets and soy sauce to the skillet, cooking for another 3-4 minutes until all vegetables are cooked through but still vibrant.
- Season with salt and black pepper to taste, and stir in the sliced green onions just before serving.
- Fluff the cooked rice with a fork and serve topped with the vegetable and tofu mixture. Garnish with sesame seeds.
