Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Tofu - 100 grams
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Broccoli florets - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and 300 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  2. While the rice is cooking, press the tofu to remove excess moisture, then cut it into cubes.
  3. In a large non-stick skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  4. Add the tofu cubes to the skillet and cook for about 5 minutes, turning occasionally until golden brown.
  5. Stir in the diced carrot, bell pepper, and sliced mushrooms. Cook for an additional 5 minutes until the vegetables are slightly tender.
  6. Add the broccoli florets and soy sauce to the skillet, cooking for another 3-4 minutes until all vegetables are cooked through but still vibrant.
  7. Season with salt and black pepper to taste, and stir in the sliced green onions just before serving.
  8. Fluff the cooked rice with a fork and serve topped with the vegetable and tofu mixture. Garnish with sesame seeds.
