Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Firm tofu - 200 grams
  • Broccoli - 100 grams
  • Carrot - 1 medium (about 70 grams)
  • Bell pepper - 1 medium (about 120 grams)
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine with 300ml of water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and water is absorbed.
  2. While the rice is cooking, press the firm tofu to remove excess moisture, then cut it into cubes.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  5. Add chopped broccoli, sliced carrot, and bell pepper to the skillet. Stir-fry the vegetables for about 5-7 minutes until they are vibrant and tender-crisp.
  6. Return the golden tofu to the skillet, add soy sauce, and stir well to combine. Cook for an additional 2 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  7. Once the rice is done, fluff it with a fork and serve it on plates. Top the rice with the tofu and vegetable mixture, and garnish with chopped green onions and sesame seeds.
