Ingredients
- Jasmine rice - 150 grams
- Water - 300 milliliters
- Firm tofu - 200 grams
- Broccoli - 100 grams
- Carrot - 1 medium (about 70 grams)
- Bell pepper - 1 medium (about 120 grams)
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine with 300ml of water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and water is absorbed.
- While the rice is cooking, press the firm tofu to remove excess moisture, then cut it into cubes.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add chopped broccoli, sliced carrot, and bell pepper to the skillet. Stir-fry the vegetables for about 5-7 minutes until they are vibrant and tender-crisp.
- Return the golden tofu to the skillet, add soy sauce, and stir well to combine. Cook for an additional 2 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Once the rice is done, fluff it with a fork and serve it on plates. Top the rice with the tofu and vegetable mixture, and garnish with chopped green onions and sesame seeds.
