- Carrot - 1 medium, sliced
- Bell pepper (red or yellow) - 1, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Curry powder - 2 tablespoons
- Turmeric - 1 teaspoon
- Vegetable broth - 200 ml
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and grated ginger to the skillet, stirring for another minute until fragrant.
- Stir in the curry powder and turmeric, cooking for 1 minute to release the spices' aromas.
- Add the sliced carrots, diced bell pepper, and zucchini to the skillet. Cook for about 5 minutes until the vegetables begin to soften.
- Pour in the coconut milk, vegetable broth, and soy sauce, stirring to combine. Bring the mixture to a gentle simmer.
- Add the drained chickpeas and cook for an additional 10-15 minutes, allowing the sauce to thicken and the flavors to meld.
- Season with salt and pepper to taste. Remove from heat.
- Serve the curry over the cooked jasmine rice, garnished with fresh cilantro and lime wedges on the side.
