  • Chickpeas (canned, drained) - 240 grams
  • Carrot - 1 medium, sliced
  • Bell pepper (red or yellow) - 1, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Curry powder - 2 tablespoons
  • Turmeric - 1 teaspoon
  • Vegetable broth - 200 ml
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and grated ginger to the skillet, stirring for another minute until fragrant.
  4. Stir in the curry powder and turmeric, cooking for 1 minute to release the spices' aromas.
  5. Add the sliced carrots, diced bell pepper, and zucchini to the skillet. Cook for about 5 minutes until the vegetables begin to soften.
  6. Pour in the coconut milk, vegetable broth, and soy sauce, stirring to combine. Bring the mixture to a gentle simmer.
  7. Add the drained chickpeas and cook for an additional 10-15 minutes, allowing the sauce to thicken and the flavors to meld.
  8. Season with salt and pepper to taste. Remove from heat.
  9. Serve the curry over the cooked jasmine rice, garnished with fresh cilantro and lime wedges on the side.
