Ingredients

  • Catfish fillet - 300 grams
  • Rice - 150 grams
  • Coconut water - 200 ml
  • Sugar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Shallots - 2, minced
  • Garlic - 2 cloves, minced
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Green onions - 2, chopped (for garnish)
  • Chili pepper - 1, sliced (optional, for garnish)
  • Salt - to taste

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it for 30 minutes.
  2. In a pot, combine the soaked rice with 300 ml of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until cooked.
  3. While the rice is cooking, prepare the fish by cutting the catfish fillet into bite-sized pieces and marinating it with soy sauce, fish sauce, black pepper, and minced garlic for about 15 minutes.
  4. In a clay pot or heavy skillet, heat vegetable oil over medium heat. Add minced shallots and sauté until fragrant and golden brown.
  5. Add the marinated fish to the pot and cook on medium heat for about 5 minutes, turning occasionally until the fish is slightly browned.
  6. Sprinkle the sugar over the fish and pour in the coconut water. Bring to a gentle boil, then reduce heat to low, cover, and simmer for another 10-15 minutes until the sauce thickens.
  7. Once the sauce has thickened and the fish is cooked through, taste and adjust seasoning with salt if needed.
  8. Serve the fish hot over a bed of steamed rice, garnished with chopped green onions and sliced chili pepper if desired.
