Ingredients

  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Green onions - 2, chopped

Steps

  1. Rinse the catfish fillets under cold water and pat dry with paper towels. Cut them into bite-sized pieces.
  2. In a medium bowl, combine the catfish pieces with soy sauce, fish sauce, brown sugar, and black pepper. Marinate for 15 minutes.
  3. In a large skillet, heat vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and golden.
  4. Add the marinated catfish pieces to the skillet, cooking for about 5 minutes on each side until they are browned and cooked through.
  5. Reduce the heat to low and add a splash of water if needed to create a sauce. Let it simmer for an additional 5 minutes.
  6. Serve the caramelized fish over cooked jasmine rice, garnished with fresh cilantro and chopped green onions.
