Steps
- Rinse the catfish fillets under cold water and pat dry with paper towels. Cut them into bite-sized pieces.
- In a medium bowl, combine the catfish pieces with soy sauce, fish sauce, brown sugar, and black pepper. Marinate for 15 minutes.
- In a large skillet, heat vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and golden.
- Add the marinated catfish pieces to the skillet, cooking for about 5 minutes on each side until they are browned and cooked through.
- Reduce the heat to low and add a splash of water if needed to create a sauce. Let it simmer for an additional 5 minutes.
- Serve the caramelized fish over cooked jasmine rice, garnished with fresh cilantro and chopped green onions.
