Ingredients

  • Jasmine rice - 200 grams
  • Sweet corn kernels (fresh or frozen) - 150 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 300 ml
  • Shallots - 2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 20 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced
  • Sesame oil - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the sesame oil over medium heat. Add the chopped shallots and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  3. Add the rinsed rice to the saucepan and stir to coat the grains with oil, cooking for another 2 minutes.
  4. Pour in the coconut milk and vegetable broth, then add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
  5. Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork and gently fold in the sweet corn, chopped green onions, and cilantro. Squeeze lime juice over the top and mix well.
  7. Serve warm, garnished with extra cilantro and lime wedges if desired.
