- Jasmine rice - 200 grams
- Sweet corn kernels (fresh or frozen) - 150 grams
- Coconut milk - 200 ml
- Vegetable broth - 300 ml
- Shallots - 2 medium, finely chopped
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Fresh cilantro - 20 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, juiced
- Sesame oil - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the sesame oil over medium heat. Add the chopped shallots and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.
- Add the rinsed rice to the saucepan and stir to coat the grains with oil, cooking for another 2 minutes.
- Pour in the coconut milk and vegetable broth, then add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
- Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and gently fold in the sweet corn, chopped green onions, and cilantro. Squeeze lime juice over the top and mix well.
- Serve warm, garnished with extra cilantro and lime wedges if desired.
