Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, diced
  • Mushrooms - 100 grams, sliced
  • Tofu - 150 grams, cubed
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.
  3. While the rice is cooking, heat vegetable oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Add cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  5. In the same skillet, add sliced mushrooms, carrots, bell pepper, and zucchini. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  6. Return the cooked tofu to the skillet, then add soy sauce, sesame oil, salt, and black pepper. Stir well and cook for an additional 2-3 minutes.
  7. Fluff the cooked rice with a fork and divide it between two serving plates.
  8. Top each plate of rice with the stir-fried vegetable and tofu mixture.
  9. Garnish with chopped cilantro and green onions before serving.
