- Jasmine rice - 150 grams
- Water - 300 ml
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Zucchini - 1 small, diced
- Mushrooms - 100 grams, sliced
- Tofu - 150 grams, cubed
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.
- While the rice is cooking, heat vegetable oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
- In the same skillet, add sliced mushrooms, carrots, bell pepper, and zucchini. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the cooked tofu to the skillet, then add soy sauce, sesame oil, salt, and black pepper. Stir well and cook for an additional 2-3 minutes.
- Fluff the cooked rice with a fork and divide it between two serving plates.
- Top each plate of rice with the stir-fried vegetable and tofu mixture.
- Garnish with chopped cilantro and green onions before serving.
