Ingredients
- Beef sirloin - 300 grams
- Lemongrass stalks - 2 (finely chopped)
- Garlic - 2 cloves (minced)
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Brown sugar substitute (erythritol or stevia) - 1 teaspoon
- Black pepper - 1 teaspoon
- Cauliflower - 400 grams (riced)
- Coconut oil - 1 tablespoon
- Salt - to taste
- Fresh cilantro - for garnish
- Lime wedges - for serving
Steps
- Start by marinating the beef: In a bowl, combine the chopped lemongrass, minced garlic, fish sauce, soy sauce, brown sugar substitute, and black pepper. Add the beef sirloin, ensuring it's well coated, and let marinate for at least 15 minutes.
- While the beef marinates, prepare the cauliflower rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Alternatively, use pre-riced cauliflower.
- In a large skillet, heat coconut oil over medium heat. Add the riced cauliflower, season with salt, and sauté for about 5-7 minutes until tender. Set aside.
- Preheat a grill pan or outdoor grill over medium-high heat. Grill the marinated beef for about 3-4 minutes on each side, or until cooked to your desired doneness.
- Once cooked, remove the beef from the grill and let it rest for a couple of minutes before slicing it thinly.
- To serve, place a generous portion of cauliflower rice on each plate, top with sliced beef, and garnish with fresh cilantro and lime wedges.
