Ingredients

  • Jasmine rice - 150 grams
  • Extra firm tofu - 200 grams
  • Carrots - 2 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Vegetable broth - 250 ml
  • Soy sauce - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat 1 tablespoon of cooking oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the sliced carrots, daikon radish, and mushrooms, cooking for about 5 minutes until they begin to soften.
  5. Cut the tofu into cubes and add it to the pot. Gently mix to combine.
  6. Pour in the vegetable broth, soy sauce, hoisin sauce, five-spice powder, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until the vegetables are tender and the sauce thickens slightly.
  7. While the vegetable mixture is simmering, cook the soaked rice in a rice cooker or in a pot according to the package instructions until fluffy.
  8. Once the vegetables are cooked, taste and adjust seasoning if necessary.
  9. Serve the vegetable mixture over the cooked jasmine rice, garnished with fresh cilantro and lime wedges.
