- Jasmine rice - 150 grams
- Extra firm tofu - 200 grams
- Carrots - 2 medium, sliced
- Daikon radish - 100 grams, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Vegetable broth - 250 ml
- Soy sauce - 2 tablespoons
- Hoisin sauce - 1 tablespoon
- Five-spice powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Fresh cilantro - for garnish
- Lime wedges - for serving
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat 1 tablespoon of cooking oil over medium heat. Add the diced onion and sauté until translucent.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in the sliced carrots, daikon radish, and mushrooms, cooking for about 5 minutes until they begin to soften.
- Cut the tofu into cubes and add it to the pot. Gently mix to combine.
- Pour in the vegetable broth, soy sauce, hoisin sauce, five-spice powder, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until the vegetables are tender and the sauce thickens slightly.
- While the vegetable mixture is simmering, cook the soaked rice in a rice cooker or in a pot according to the package instructions until fluffy.
- Once the vegetables are cooked, taste and adjust seasoning if necessary.
- Serve the vegetable mixture over the cooked jasmine rice, garnished with fresh cilantro and lime wedges.
