- Jasmine rice - 200 grams
- Soy protein (textured vegetable protein) - 100 grams
- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Hoisin sauce - 1 tablespoon
- Garlic - 3 cloves, minced
- Onion - 1 medium, thinly sliced
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli - 100 grams, cut into florets
- Green onion - 2 stalks, chopped
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, bring the vegetable broth to a boil and add the soaked rice. Reduce heat, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Meanwhile, rehydrate the soy protein by soaking it in hot water for 10 minutes, then drain and squeeze out excess moisture.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and translucent.
- Add the rehydrated soy protein, soy sauce, hoisin sauce, black pepper, and stir-fry for 5 minutes until the protein is well-coated and starts to brown.
- Add the bell pepper, carrot, and broccoli to the skillet. Stir-fry for another 5-7 minutes, until the vegetables are tender but still crisp.
- Drizzle the sesame oil over the stir-fried mixture, toss well, and remove from heat.
- Fluff the cooked jasmine rice with a fork and divide it between two plates. Top with the stir-fried soy protein and vegetables.
- Garnish with chopped green onion and fresh cilantro before serving.
