Ingredients

  • Jasmine rice - 200 grams
  • Soy protein (textured vegetable protein) - 100 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, thinly sliced
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli - 100 grams, cut into florets
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, bring the vegetable broth to a boil and add the soaked rice. Reduce heat, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  3. Meanwhile, rehydrate the soy protein by soaking it in hot water for 10 minutes, then drain and squeeze out excess moisture.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and translucent.
  5. Add the rehydrated soy protein, soy sauce, hoisin sauce, black pepper, and stir-fry for 5 minutes until the protein is well-coated and starts to brown.
  6. Add the bell pepper, carrot, and broccoli to the skillet. Stir-fry for another 5-7 minutes, until the vegetables are tender but still crisp.
  7. Drizzle the sesame oil over the stir-fried mixture, toss well, and remove from heat.
  8. Fluff the cooked jasmine rice with a fork and divide it between two plates. Top with the stir-fried soy protein and vegetables.
  9. Garnish with chopped green onion and fresh cilantro before serving.
